Bolognese Pies with Hot Water Crust

Individual serving of rustic hot water crust pies filled with leftover beef Bolognese, making them perfect for a weekend meal with some seasonal salad and easier for portion control too. Hot water crust pastry is used primarily because of its ability to create a strong, long lasting crust that can hold up to chunky, dense fillings. It’s easier to handle and a lot more versatile than standard pastry crust, so you don’t have to worry about cracking or tearing. If you want to cook Bolognese from the scratch, you may need to have about 500 grams of ground beef for this recipe.

This simple spiced chicken is a super easy and scrumptious dinner made by roasting overnight-marinated bone-in, skin-on chicken thighs, then pairing with an earthy nocellara green olive walnut vinaigrette. Serve it with your desired sides, either rice, pasta, bread or just some roasted vegetables.
Grown in Castelvetrano, Sicily, Nocellara olives are picked young and cured in lightly salted brine, giving them their beautifuly bright green colour as well as their mild, buttery, meaty flavour.

Kanelbullar - Swedish Cinnamon Buns

These delicious Swedish cinnamon buns ‘Kanelbullar’ are the epitome of cosiness, comfort, deliciousness and simply perfect when you need a sweet treat. You have to try this original recipe: we love the fluffy yeast dough with the sweet cinnamon filling and can't get enough of the crispy sugar crust! Since I have coated the kanelbullar with sugar after baking, I reduced the amount of sugar in the dough. If you don’t like the sugar crust, then it’s the best to increase the amount of sugar in the dough. I believe that cardamom goes particularly well with cinnamon buns. However, not everyone likes the distinctive flavour of cardamom, if that's not your cup of tea, simply leave it out.

Snap Pea, Baby Corn and Beansprout Salad

Fresh, nutty and so crunchy, this simple Asian salad is great for a light lunch or as a side for some grilled meat. It’s a chore to snap off the stringy tails of mung bean sprouts, but they look prettier and taste so much better without tails. If you can’t find fresh baby corn, then use canned one, but the taste and texture won’t be the same.

Roast Chicken Thighs with Chocolate Mole

Comforting, deeply savoury, and extremely delicious, this chicken smothered with a chocolate mole, aka mole negro, is made with layers of complex and bold flavours. The sauce is not only great for chicken, pork, also great to jazz up the root vegetables. And of course you can spoon the sauce over the beans too. Use different kinds of dried chillies if you have, otherwise, a single kind would work just fine.

Lavender Chocolate Cookies

If you fancy something sweet but don't want to bake a cake, homemade cookies are a great alternative. They are quick to bake, taste delicious and are great for sharing. Simple and delicious with crunchy edges and a slightly soft center, these lavender chocolate cookies will surprise you with an intriguing and unexpected flavour combination. Dark chocolate harmonises perfectly with the slightly floral aroma of dried lavender flowers. A pinch of sea salt rounds off the flavour. Leave the cookies to cool on the tray a few minutes before transfering them to wire rack to cool as the cookies are still very soft fresh from the oven and could otherwise break. If you don’t have fleur de sel, use sea salt flakes.

Licorice Muffins

Muffins with licorice toffee? To be honest, that sounds a bit strange at first, doesn't it? I tried the combination anyway, since my husband loves licorice. Anyone expecting a standard sweet muffin probably won’t like the licorice flavour. But if you like licorice candy, and are adventurous enough to try new things, then these licorice toffee muffins are perfect for you. You can use either sweet or salted licorice for the recipe. To intensify the flavour, add a couple of tablespoons of licorice liqueur to the batter too.

30 Recipes that will turn Eggplant Skeptics into Fans

Saturday, April 26, 2025

Eggplant, aka aubergine, is one of very few vegetables that I can enjoy without tummy issues, and is surprisingly versatile. Whether fried until crispy, steamed, whizzed into a dip, in a chocolate cake, in a casserole or in a curry, plus much more - these quick and easy recipes with aubergine or eggplants are perfect for everyday use. With these dishes, you'll even get those who have an aversion to vegetables on your side.

  1. Chrysanthemum-shaped Eggplant

Aubergine / eggplant prepared this way is so fun and delicious, sweet and sour, easy yet impressive, a delicacy for all ages! A restaurant-worthy yet so simple appetizer that you can easily make it at home. The main feature of the dish is the method of cutting, slicing straight from top to bottom, leaving the bottom intact, and turning ninety degrees to repeat the previous process. I have peeled the eggplant, but you can leave the skin on.

Spring Pancake with Smoked Salmon

For once, the pancakes are not served sweet for breakfast, but in a savoury version with smoked salmon and a hazelnut vinaigrette as a light meal. I used a springform pan to make a huge baked pancake, but you can make the regular one in a skillet. Besides smoked salmon, you can also serve the pancakes with poached eggs, or some stirfried chicken.

Baked Cloud Eggs with Asparagus

I have ZERO idea why Blogger has UNpublished my post! It simply told me that my post violated the community guides that I DIDN'T. It's just a recipe, I didn't publish anything unusual. Do anyone know what to do? I am repbulishing this post, hopping that Blogger will READ it through and publish it again. Sorry if I have lost all of your comments.

Ready for the fluffiest egg ever? Then switch on the oven, get the Parmesan and eggs out of the fridge and let’s make some fluffy egg clouds for breakfast or brunch! The egg whites must be whipped until stiff peaks have formed before folding in chives and Parmesan. They are then formed into 4 clouds and baked in the oven for 4 minutes before sliding the egg yolk into the well in the center and bake for a further 2-4 minutes, depending on how brown you like them.
