Pumpkin Cranberry Sauce Bread

A delicious and moist quick bread that is refined sugar free and fantastic for breakfast, afternoon tea or as a perfect lunch box filler. This quick bread recipe is a great way to use up leftover cranberry sauce this holiday season! I used the homemade cranberry sauce that has whole cranberries. Feel free to use the canned one.

 
  • 115 g Unsalted butter, softened
  • 150 g Erythritol or sugar
  • 2 Large eggs, at room temperature
  • 1 tsp Pure vanilla powder
  • 1 tsp Pumpkin pie spice mix
  • 300 g Pumpkin puree
  • 250 g Plain flour
  • 1 tsp Baking soda
  • A pinch Sea salt
  • 120 g Chunky cranberry sauce
  1. Preheat the oven to 180C/350F. Grease or line a 24x12x9 cm loaf pan with baking paper.
  2. In a large mixing bowl, cream together butter and erythritol or sugar using a hand mixer or your stand mixer. Add eggs, one at a time, and then beat in vanilla powder, spice mix and pumpkin puree. Mix to combine. 
  3. In a medium mixing bowl, mix together flour, baking soda and salt. Sift the flour mixture to the egg mixture and stir to incorporate.  
  4. Pour half of the batter into the prepared loaf pan, add half of the cranberry sauce, then top with the remaining the batter and cranberry sauce.
  5. Bake the bread in the middle of hot oven for 50-60 minutes or until a skewer inserted in centre comes out clean. Set aside in the pan for 10 minutes before transferring to a wire rack to cool. Serve warm or at room temperature.
