Fig Leaf Infused Sugar

Dry some fresh picked fig leaves in your oven or dehydrator at 40C/100C for about 2 hours until dry and crispy. Then grind them into a powder and mix with sugar. This create an infused sugar with a unique nutty, coconuty flavour with a hint of green tea for use in desserts, beverages, and baked goods. Use it like you do with vanilla sugar.

 
  • 4 Fresh fig leaves
  • 150 g Regular sugar (or xylitol/erythritol)
  1. Pick and wash the fig leaves. Pat them dry thoroughly with a kitchen towel.
  2. Place them in a dehydrator or oven and dry at 40C/100C for about 2 hours until they are completely dry. You want them to be totally crisp but not browning at all.
  3. Remove the stems and crumble them. Place them in a spice grinder and grind them into a powder. Mix with the sugar. Store in an airtight container.

  1. It looks wonderfully green. I know that fig leaves also have medicinal powers and benefits, you can remove warts from the white milk from fig leaves.
