Sumac-roasted Chicken Traybake

This middle eastern inspired sumac roasted chicken recipe is bursting with flavours. A delicious traybake that the whole family will enjoy. Don't skip the yoghurt sauce, which is is a key component of the dish, adding a cooling contrast to the well-spiced chicken. You can either drizzle the yoghurt dressing over the chicken or plate the chicken on top of the sauce and sprinkle with extra sumac if desired.
Sumac has a tangy, citrusy, and slightly sour taste with fruity undertones. It's often compared to lemon juice and zest due to its tartness, but it's a bit milder and more complex.

 
Yoghurt Dressing
  • 8 Chicken thighs, bone-in, skin-on
  • 2 tbsp Olive oil
  • Sea salt and black pepper
  • 2 tsp Chilli flakes
  • 1 1/2 tbsp Sumac

  • 1 tbsp Ground cinnamon
  • 1 tbsp Ground cumin
  • Chopped dill, to garnish
  • 200 g Full fat Greek yoghurt
  • 2 tbsp Lemon juice
  • 1 tbsp Fresh dill, chopped
  • 1 Garlic clove, minced
  • ¼ tsp Sea salt
  1. Heat the oven to 180C/350F. Rub the chicken thighs with olive oil and season well.
  2. Mix the chilli flakes, sumac, cinnamon and cumin together then rub the chicken with the spices. Put onto a large baking tray and roast for an hour until the chicken is tender.
  3. Whisk the dressing ingredients in a small bowl. Serve the chicken drizzled with the dressing and garnish with chopped dill and additional sumac if desired.

  26. Sumac is a spice I only began using in the last few years. It adds a beautiful flavour with a pinch of tartness. I love tray bake dinners, easy to make and easy to clean up.

  28. Traybake - I already like this "term", means fuss-free, easy cooking, same as sheet-pan cooking as the term commonly used here. And yes, lots of yogurt sauce for me, please :)
