A nutty, herby mix of coconut flakes, mint, parsley, chives, green chilli, garlic and olive oil is perfect for stuffing juicy and flavourful chicken thighs, which are roasted until golden crispy on the outside and succulent inside. Served with a grilled peach salad for a tasty budget summer meal. It’s naturally gluten free and suitable for a low carb diet.
| Grilled Peach Salad |
- 20 g Fresh mint leaves, finely chopped
- 15 g Fresh flat-leaf parsley leaves, finely chopped
- 10 g Chives, finely chopped
- 60 g Desiccated coconut
- 1 Green chilli, finely chopped
- 2 Garlic cloves, finely chopped
- 2 tbsp Extra virgin olive oil
- Sea salt and freshly milled black pepper
- 5-6 Chicken thighs, skin on
- Olive oil cooking spray

- 6 Mini paprika, halved lengthways, seeds removed
- 3 Peaches, cut into wedges
- 2 tbsp Extra virgin olive oil
- 2 tbsp White balsamic vinegar
- 1 tsp Wholegrain mustard
- 60 g Greens of your choice
- 40 g Smoked almonds, roughly chopped

- Preheat oven to 200C/400F. Combine mint, parsley, chives, coconut, chilli, garlic and olive oil in a bowl. Season.

- Run your fingers under the skin of each chicken piece to create a large pocket. Spoon mint mixture under skin, rubbing skin to distribute mixture evenly. Rub any leftover mixture all over chicken. Place chicken in a baking pan. Spray with olive oil and season with salt and pepper. Bake for 50 minutes or until chicken is browned and cooked through.
- Meanwhile, make grilled peach salad. Preheat a barbecue grill or chargrill pan on medium-high heat. Drizzle peach and mini paprika with 1/3 of olive oil. Cook paprikas, turning, for 5 to 8 minutes or until charred and tender. Transfer to a plate. Cook peach for 2 minutes each side or until charred. Transfer to plate.
- Whisk remaining olive oil, vinegar and mustard in a jug. Season with salt and pepper. Arrange the greens, baby paprika, and peach on a serving plate. Drizzle with dressing. Sprinkle with almonds. Serve chicken with salad.
