Easy and perfectly juicy roasted chicken with tangy white beans combined with lemon and dill for a warming and hearty high protein dinner that the whole family will love. This is made with bone-in skin-on chicken thighs, but drumsticks would work just as great. While any white bean with or without mirepoix will do, I prefer cannellini, aka white kidney beans, to navy beans or pea beans.
Chicken with White Beans, Capers and Lemon

- 800 g Tin cannellini beans with Suppengrün/mirepoix/vegetables, drained and rinsed
- 35 g Drained capers
- 1 tsp Dried dill
- 1 Organic lemon, zested and sliced
- Sea salt and ground pepper
- 6 Bone-in, skin-on chicken thighs
- 3 tbsp Chicken schmaltz
- 200 ml Chicken broth
- 2 tbsp Dill, chopped

- Preheat the oven to 200C/400F. Toss beans, capers, dried dill and lemon zest in a large baking dish and spread out evenly on bottom of pan and season with salt and pepper.
- Season the chicken thighs with salt and pepper. Heat the chicken schmaltz in an oven safe pan
and brown the chicken on all sides.
- Place the browned chicken thighs on the top of beans. Arrange lemon slices around the chicken thighs, then add chicken broth.
- Roast chicken for about 35 minutes until the chicken is cooked through. Scatter with the chopped dill and serve with crusty bread if you wish.
