Get your dinner party off to a great start with these baked figs with blue cheese cream. Black Forest ham wrapped sweet ripe figs with salty, earthy gorgonzola cheese are a magical combination and make an elegant appetizer. They are incredibly tasty and not hard to make at all. If you ain't fancy for blue cheese, use soft goat cheese instead. Black Forest ham can be substituted with Prosciutto or Serrano ham.

- 6-8 Ripe but firm figs
- 6-8 slice Black Forest ham
- 200 g Whipping cream
- 120 g Gorgonzola cheese
- 2 tbsp Parmesan cheese, freshly grated
- 1 tsp Rosemary, chopped (or tarragon or thyme)
- 2 tbsp Cognac (or marsala or sherry)
- Freshly ground black pepper
- 1/2 tsp Pink peppercorns
- 1 tbsp Toasted pistachio nuts, roughly chopped
- 1 tbsp Honey, to finish

- Preheat the oven to 200C/400F. Score a deep cross in the top of each fig. Wrap each fig with a slice of Black Forest ham.
- Heat the cream, gorgonzola, parmesan cheese and half of rosemary together in a saucepan, whisking all the while. Simmer on a medium heat until reduced by half, about 10 -12 minutes. Add the cognac and simmer for a further 2-3 minutes. Season with black pepper.
- Pour the cream into 18cm-24cm oven-proof dish, place the figs in the sauce. Sprinkle with the remaining rosemary and pink peppercorns. Bake for about 20 minutes. Scatter over the pistachio nuts and drizzle a little honey over the figs. Serve warm with crusty bread or crackers.

We don't really get figs here. I watched a show the other day where some people were eating figs. I've never done that except in a fig cookie or fig jelly. Time to expand my horizons and see if I can find any figs. Happy new week Angie.
