Simple, classic and always popular: fresh goat's cheese wrapped in smoky bacon on a lettuce salad with baby radishes, raspberries and a thyme vinaigrette. This salad is particularly popular as a starter for festive menus. With some homemade sourdough bread, this salad will also make an excellent main course. It's quick to make, super tasty and an absolute eye-catcher. I used a mixture of oak leaf, lollo rosso und lollo bianco as the salad base, but you can use other lettuce or greens.

- 150 g Lettuce (oak leaf lettuce, lollo rosso und lollo bianco)
- 100 g Small white radishes, halved
- 125 g Raspberries
- 1 tbsp Chives, chopped
- 4x60 g Fresh goat's cheese
- Black pepper
- 8 slice Bacon
- 1 tbsp Olive oil
- 4 Thyme sprigs

- 3 tbsp White wine vinegar
- 1 tbsp Thyme leaves
- 3 tbsp Avocado oil
- Salt and pepper

- Clean the lettuce and tear into bite-sized pieces. For the dressing, mix the vinegar with the thyme, season with salt and pepper and stir in the oil. You can also place all the ingredients in a jar and shake until well combined.
- Season the goat cheese with freshly milled black pepper and wrap 2 slices of bacon around the centre of each piece. Make sure that the slices overlap.
- Heat the olive oil in a non-stick frying pan over medium-high heat. Fry the cheese parcels until crispy on both sides, top with thyme and fry briefly over a low heat until done. Baste frequently with cooking fat. Remove the cheese from the pan and leave to rest briefly.
- Mix the lettuce and halved radishes with half of the dressing and divide into 2-4 salad plates. Top with the raspberries, chopped chives and bacon-wrapped goat cheese.
