Creamy, sea salted and mildly tangy Feta Lesbos (made exclusively from the milk of Lesbian breed sheep in the isle of Lesbos) and Greek yoghurt are whipped into a dip and top with a refreshing herby cucumber salad that goes well with every meal. It's naturally gluten-free and keto-friendly. Serve it with some crispy pita chips or crackers if you wish.
- 300 g Organic Lebanese cucumber, diced
- 2 Spring onions, thinly sliced
- 2 tbsp Flat parsley, chopped
- 2 tbsp Dill, chopped
- 2 tbsp Extra-virgin olive oil
- 2 tbsp Fresh lemon juice
- Salt and freshly milled black pepper
- 250 g Feta Lesbos
- 150 g Full fat Greek yoghurt

- Combine the diced cucumber, sliced spring onions, parsley, dill, olive oil and lemon juice in a large salad bowl. Toss to combine. Season with salt and black pepper to taste. Let marinate for 30 minutes.
- Place the feta cheese and Greek yoghurt to a food processor. Process until smooth. Taste and season.
- Spoon the feta dip on a serving plate, top with cucumber salad. Serve with some crackers if desired.
