Spiced Pumpkin Bread with Chocolate and Walnuts

This spiced quick bread is filled with the ever-popular pumpkin flavour, warm spices, Lindt dark chocolate and walnuts, and it tastes absolutely amazing. You can always go with other nuts (pecans and hazelnuts are great) and chocolate. It's delightful as an afternoon pick-me-up treat or spread with some butter and a cup of coffee in the morning.

 
  • 210 g White spelt flour (or plain flour)
  • 1 tsp Baking soda
  • 2 tsp Pumpkin pie spice
  • 110 g Unsalted butter, softened
  • 50 g Granulated sugar
  • 50 g Coconut sugar (or brown sugar)
  • 2 Large eggs
  • 1 tsp Vanilla extract
  • 200 g Pumpkin purée
  • 150 g Lindt dark 60% chocolate, chopped (or chocolate chips)
  • 75 g Chopped walnuts
  1. Preheat the oven to 180C/350F. Line a 20x10-cm/8x4-inch loaf pan with parchment paper. Mix the flour, baking soda, and pumpkin pie spice together in a medium-sized mixing bowl.
  2. Using a stand mixer or a hand mixer, cream the butter and sugars together on high until light and fluffy, 2-3 minutes, scraping down the sides and bottom as needed.
  3. While on low speed, add the eggs and vanilla extract, and then mix on medium-high until well-combined. Scrape down the sides and bottom as needed.
  4. Still on the low speed, gradually add the dry ingredients alternately with the pumpkin purée, beginning and ending with the dry ingredients. Don't over-mix.
  5. Fold in 120 grams of chopped chocolate and 50 grams of walnuts by hand using a mixing spoon or spatula. The batter will be thick.
  6. Scrape the batter into the prepared pan, smooth out the top, and sprinkle with the remaining chocolate chips and walnuts.
  7. Bake in the middle of hot oven for 55 to 65 minutes until a toothpick inserted in the center comes out clean. Allow to cool in the pan on a cooling rack, then remove from the pan once cooled completely.
