Four entire heads of garlic, roasted to sweetness, mixed with onion, thyme, coconut milk and incorporated into this creamy soup to help boost the immune system, served with crispy Jamón ham. It's dairy free, gluten-free and keto-friendly. Perfect as a starter, or add some sourdough bread and salad for a tasty and healthy lunch or dinner.

- 4 bulb Garlic
- 3 tbsp Olive oil
- 1 Onion, chopped
- 1 tsp Fresh thyme leaves
- 1l Chicken broth
- 200 g Coconut milk
- Salt and pepper
- 5 slice Jamón (or Prosciutto)
- Flat parsley, chopped

- Preheat the oven to 180C/350F. Trim the tops off the heads of garlic. Just enough to expose all its cloves.
- Place in a small, shallow baking dish or muffin tray. Drizzle two tablespoons of olive oil over. Cover with a piece of aluminum foil. Roast the garlic for 45 minutes. Cool thoroughly.
- Line a baking tray with baking paper and place Jamón ham slices on the tray, then roast for 10-12 minutes until crisp.
- Heat one remaining olive oil in a large saucepan. Add chopped onion, thyme leaves and sauté until they start to caramelize, about 10 minutes.
- When roasted garlic is cooled, press it out of its skins. Add to the caramelized onions with chicken broth. Puree everything using an immersion blender, or a stand blender in batches. Add coconut cream and heat until well combined and hot. Season with salt and pepper to taste.
- Place the chopped parsley in serving bowls. Pour the soup over and serve with crispy Jamón ham slices.

ReplyDeleteI do enjoy myself a warming bowl of garlic soup although I've never tried it with coconut milk, which sounds lovely. With some extra jamón serrano leftover from a Spanish dinner party this past weekend, we're all set..

It is perfect to me!....I love garlic soup cold or warm!!.....delicious!!....if you are going to make condensed milk, you have to be careful with the heat.....the last thing to add is the milk powder, and if the heat is to high, you end up with caramel sauce.........Abrazotes, Marcela
