A quick and simple recipe for wholemeal beer bread made from just a few of pantry ingredients. It does not require yeast or kneading. It's so delicious either plain or buttered. Good with soups, chilli or salads. Makes excellent toast too. Flavour of bread will change, depending on type of beer used. I used Pilsner, if you prefer a more robust, pronounced bread flavour, then use darker beer, like stouts and porters. Feel free to include some spices and herbs to the batter if desired.
- 300 g Plain flour
- 200 g Wholewheat flour
- 15 g Baking powder
- 1 tsp Himalayan pink salt (or regular sea salt)
- 330 ml Beer of your choice (I used Pilsner)
- 65 g Honey
- 150 g Full fat Greek yoghurt
|
- Place a cast-iron Dutch oven with lid on in the in the lower half of the oven. Peheat the oven to 250C/500F. Line a proof basket or large bowl with a piece of baking paper. Set aside.
- Mix flours, baking powder and pink salt in a bowl. Add beer, yoghurt and honey, mix well with a large wooden spoon until a soft dough is formed. Scrape the dough into the prepared proof basket.
- When the oven is ready, life the baking paper with the dough into the hot Dutch oven. Cover and bake for 30 minutes. Remove the lid and lower the oven temperature to 230C/460F. Bake for a further 15 minutes until nicely golden and crisp.
- Remove bread and cool on a wire rack. Wait until the bread cools completely before slicing. Store airtight at room temperature for 2-3 days.

The fact that it doesn't require yeast or kneading makes it a great choice for those who want to make fresh bread without the traditional bread-making process.
