Za’atar Salmon with Spinach and Tahini

Salmon fillets with a packed-with-flavour za'atar plus extra sumac crust are perfectly paired with creamy, nutty tahini sauce in this quick and easy dish from the Ottolenghi Test Kitchen : Shelf Love. It is an easy recipe to make, perfect for a weeknight supper. Toss in your favourite greens and ready in 15 minutes!
Za’atar, a versatile and popular Middle Eastern mix of dried herbs and spices is a glorious combination of earthy, nutty, zesty, and tangy flavours, and it goes on salads, meat / fish, vegetables, labneh / yoghurt, bread, hummus...just about anything. You can easily find it in Middle Eastern grocery stores or online or make your own.

 
  • 4x125 g Salmon fillets
  • 2 tbsp Za’atar
  • 2 tsp Sumac, plus 1/2 tsp extra for sprinkling
  • 4 tbsp Olive oil
  • 300 g Baby spinach
  • 85 g Tahini
  • 3 Garlic cloves, peeled and minced
  • 4 tbsp Lemon juice
  • 100 ml Water
  • 2 tbsp Cilantro or flat parsley, finely chopped
  • Salt and pepper
  1. Preheat the oven to 220C/450F. Pat dry the salmon and sprinkle with salt and pepper. In a small bowl, combine the za’atar and sumac, then sprinkle this all over the top of the salmon to create a crust.
  2. Place a large, oven-safe skillet on medium-high heat and add 1 tablespoon of olive oil. Once hot, add the spinach and a pinch each of salt and pepper and cook for 2–3 minutes, until just wilted.
  3. Top the spinach with the salmon, skin side down, and drizzle the top of the fish with 2 tablespoons of olive oil. Bake for 5 minutes.
  4. Meanwhile, in a small bowl whisk together the tahini, garlic, 3 tablespoons of lemon juice, a good pinch of salt, and water until smooth and quite runny.
  5. When ready, remove the pan from the oven and pour the tahini sauce all around the salmon and bake for another 5 minutes, or until the fish is cooked through and the tahini is bubbling. Spoon the remaining 1 tablespoon each of lemon juice and olive oil over everything and top with the chopped flat parsley or cilantro and extra sumac. Serve immediately.
