Feed your family with this no-fuss and delicious breakfast / brunch recipe with thin, unleavened lavash (a popular flatbread in Armenia, Azerbaijan, Iran and Turkey), creamy herby goat cheese and lots of rich, buttery smoked salmon, briny, salty baby capers, nutrients-loaded red radish sprouts and peppery arugula. Smoked salmon is a great ingredient, especially when you’re short on time but still want a healthy and fresh meal. But other omega-3 rich fish would be just as good. If desired, add in a couple of soft boiled eggs. You can also cut this into small bite-sized pieces and serve them as an appetizers.
- 150 g Chavroux fresh goat cheese
- 50 g Sour cream
- 2 tbsp Fresh dill, chopped
- 1/2 tbsp Lemon zest
- Salt and black pepper
- Flatbread (I used lavash)
- 200 g Smoked salmon
- Red radish sprouts
- 1 tbsp Baby capers
- A handful arugula

- Mix together the fresh goat cheese, sour cream, chopped dill and lemon zest, then season with a little salt and plenty of black pepper.
- Place the flatbread of your choice in a serving platter. Spread the cheese mix all over it. Drape the salmon on top and scatter with sprouts, capers and arugula. Season again and serve cut into squares with the lemon wedges to squeeze over.

ReplyDeleteYou're speaking my language with this breakfast flatbread, Angie! For me, bagels are too thick and "bready" first thing in the morning, but I loved smoked salmon with breakfast so these would be ideal!
