Cake-Style Blackberry Cobbler

A cobbler is a deep-dish fruit dessert typically consisting of a fruit base and a slightly sweet biscuit topping or pie dough topping. Traditionally the fruit stew is the base for the topping, but variations can include the biscuits on the bottom, and some even use batter in place of biscuit dough. The common belief is that the name came from the biscuit topping’s resemblance to cobblestones. The ideal cobbler topping should be light and fluffy underneath, to soak up all those juices, but firm and golden crispy on the top.
You can make a cobbler from any type of fruit. Use a single type, or experiment with different combinations of your favourites. Frozen fruit is also fine, but make sure it is properly thawed before you use it. Serve the cobbler warm, with a scoop or two of good vanilla ice cream.

  • 55 g Butter, softened
  • 60 g Coconut sugar
  • 120 g Whole spelt flour
  • 1/2 c Coconut milk (or regular milk)
  • 300 g Blackberries, fresh (if using frozen one, thaw first, and save the juice)
  • 60 g Raw cane sugar
  • 240 ml Cold tap water to cover (use the saved berry juice and add water to make 1 cup of liquid to pour on top of the cobbler)
  1. Preheat oven to 180C/350F. Grease a 20-22 cm / 8-9 inch casserole dish and set aside. For the bottom layer, beat the ingredients together using a hand mixer. It will be like a thick cake batter.
  2. Pour the batter into the prepared dish and top with the blackberries in a single layer. Sprinkle the cane sugar over the blackberries. Then pour the cold tap water on top.
  3. Place it on a baking tray and bake in the middle of hot oven for 45-60 minutes until the top becomes golden crispy and filling bubbles. Let cool slightly. Serve warm with a scoop of vanilla ice cream if desired.
