Passionfruit and Lime Slices

With just 15 minutes preparation, a few pantry ingredients and an overnight chill, this tropical slice will have you coming back for more, time and again. It is easy to make, has a delicious buttery base and will satisfy the sweetest craving. Instead of making the base from the scratch, you can also use butter cookies or digestive cookies to line the pan, then pour over the topping and bake.

  • 1/2 tsp Melted butter for the pan
  • 1 Vanilla pod (or 1 tsp vanilla extract)
  • 150 g Butter, at room temperature
  • 30 g Caster sugar
  • 1 Large egg, at room temperature
  • 180 g Plain flour
  • 1/4 tsp Baking powder
  • 2 tbsp Milk of your choice (I used coconut milk)
  • 395 g can Sweetened condensed milk
  • 120 ml Fresh lime juice (4-5 limes)
  • 3 Passionfruit, halved
  • Lime zest for garnishing
  • Mint leaves for garnishing
  1. Preheat oven to 180C/350F. Brush a 18-21 cm / 7-8 inch pan with melted butter to grease. Line the base and sides with baking paper, allowing the sides to overhang.
  2. Cut the vanilla pod in half lengthways and scarpe out the seeds with the point and edge of a sharp knife.
  3. Using an electric beater, beat the butter, sugar and vanilla seeds in a bowl until pale and creamy. Beat in the egg. Fold in the plain flour, baking powder and coconut milk until combined.
  4. Scrape the mixture into the prepared pan. Use the back of a metal spoon to spread and press evenly over the base of the pan. Bake for 20 minutes.
  5. Meanwhile, whisk the sweetened condensed milk, lime juice and passionfruit pulp in a large jug until smooth and well combined. Pour the condensed milk mixture over the base.
  6. Bake for 15 minutes or until firm to the touch. Set aside to cool completely. Chill overnight (or at least 4 hours if you can't wait). Garnish with lime zest and mint leaves. Cut into slices to serve.

    Sadly we do not have either passion fruit nor condensed milk here. Due to the heavy rainfalls this spring even cherries and strawberries are hard to find and we won't have any apricots probably at all. And the prices are insane, just paid two freaking euro for a kilo of carrots! Not even the fresh spring ones.

  27. Without the base, I'm actually thinking of of passionfruit lime sorbet. Weird, I am.But am associating combo of passion fruit and lime to be something like a "palate cleanser" cos it's just so refreshing.
