Beernana bread is a banana bread loaf made with beer. Beer adds a unique twist to this banana bread recipe. I used a local pale beer, but any beer would work. You may substitute raisins or dates for the figs if you wish. It's egg free, sugar free and dairy free.
- 360 g White spelt flour
- 75 g Oat flakes
- 10 g Baking powder
- 6 g Baking soda
- 1/4 tsp Fine sea salt
- 4 Large overripe bananas, mashed
- 330 ml Beer of your choice
- 200 g Dried figs, cut into smaller pieces
- 2 tbsp Olive oil
- 1 tbsp Sesame seeds
- Sea salt flakes
|
- Preheat your oven to 190C/375F. Line a 25x11x7cm loaf pan with parchment paper.
- In a large bowl, mix flour, oats, baking powder, baking soda, and salt. In another bowl, mix bananas and beer until blended. Add to flour mixture and stir just until moistened. Fold in chopped figs.
- Spread the batter into the prepared loaf pan. Drizzle with olive oil and sprinkle with sesame seeds and salt.
- Bake until a toothpick inserted in center comes out clean, 65-75 minutes. Cool in the pan 10 minutes before turning out onto a wire rack to cool.
