Fresh heirloom tomatoes are hollowed out, then filled with a deliciously healthy tuna salad and served on a bed of greens and herbs. These protein-packed, no cook stuffed heirloom tomatoes are great anytime of the year, but especially when fresh tomatoes are in season. They are naturally gluten free and keto-friendly. Use some homemade mayonnaise instead of Greek yoghurt if you need to go dairy free.
- 4 Large heirloom tomatoes (I used primora striped tomatoes)
- 1 can / 160 g Tuna in water, drained (I used Saupiquet)
- 2 tbsp Dill stems, chopped
- 2 tbsp Fennel, diced
- 1 Small red onion, peeled and finely chopped
- 1/2 tbsp Small capers
- 2 tbsp Greek yoghurt
- 1 tbsp Lemon juice
- Salt and pepper to taste
- Dill or fennel fronds to garnish
- Pomegranate seeds, optional
- Salad greens, optional

- With a sharp knife, slice 0.5cm / 1/5inch off the top of each tomato. With a spoon, scoop out the seeds and pulp. Roughly chop the pulp and place in a large bowl.
- Add the tuna, dill stems, fennel, red onion, capers, sour cream, lemon juice, salt and pepper. Gently toss to combine.
- Spoon the tuna mixture into the tomatoes. Serve with the tops on a bed of salad greens and sprinkle some pomegranate seeds over if using.
