A hint of mango adds a surprising subtle sweetness to this simple tomato soup. The soup is great served warm or chilled. I topped the soup with tender blanched green asparagus tips for a light and refreshing meal, but you can pair it with crispy croutons or baguette. For best result, use the ripe tomatoes and mango.

- 400 g / 3 Tomatoes, peeled and chopped
- 1 tbsp Olive oil
- 1 Small white onion
- 1 clove Garlic, peeled and chopped
- 10 g Fresh ginger, peeled and chopped
- 1 tsp Mild curry powder
- 1 tsp Turmeric
- 250 ml Vegetable stock
- 1 Small ripe mango
- Salt and pepper
- 200 g Green asparagus tips
- Flat parsley to garnish

- Cut a shallow X on the bottom of each tomato. Fill a pot with water and bring it to a boil. Carefully lower the tomato into the boiling water. Remove them after 30 seconds, or when the skin begins to peel back. Rinse the tomatoes under cold water and peel off the skin. Roughly chop the tomatoes.
- Heat the olive oil in a medium saucepan over medium heat. Add in the onions and sauté until just turning brown, around 5 minutes. Add in the garlic, ginger and spices to cook for 1 minute until fragrant. Add in chopped tomatoes and cook for another minute. Pour in the stock and cook for 5 minutes.
- Peel the mango, remove the pit and cut the mango into small cubes. Set aside a few pieces for garnish and add the rest to the soup. Use an stick blender to puree the soup. Season the soup with salt and pepper.
- Meanwhile, blanch the asparagus tips. Fill a saucepan with 1 inch water and 1 teaspoon salt and bring it to boil. Add asparagus and boil for 2 minutes until crispy tender. Immediately remove from boiling water and run under cold water to stop the cooking process.
- When ready to serve, pour the soup into the bowls and top with blanched asparagus tips and garnish with the reserved mango cubes and parsley.

Preparo la sopa de tomate también, aunque muy distinta a la tuya. Me gusta el mango y añadirlo a recetas saladas, la combinación con el tomate y especias no la conozco y me gustará probarla.

I’m saving this recipe for late summer. I have a lot of tomatoes planted, and I’m hoping to be able to experiment with a lot of new recipes.
