Ottolenghi's Tomato and Pomegranate Salad

The pleasant sour taste of pomegranate arils with a touch of sweetness complements the juicy, sunny sweetness of ripe tomatoes really well in this simple yet awesome salad. Use a mix of different tomoatoes, preferably heirloom varieties, for more colours, texture and flavours. It works as a fresh and healthy lunch with some homemade bread, or as an easy side to serve with grilled meat or seafood or whatever you enjoy.

 

Ottolenghi's Tomato and Pomegranate Salad

SaladDressing
  • 1-1.2 kg Mixed tomatoes, cut into 0.5cm dice
  • 1 Red pepper, cut into 0.5cm dice
  • 1 Yellow pepper, cut into 0.5cm dice
  • 1 Small red onion, finely diced
  • Seeds of 1 medium pomegranate
  • Fresh herbs of your choice, chopped (I used dill and chives)
  • 2 Garlic cloves, minced
  • 1/2 tsp Ground allspice
  • 2 tsp White wine vinegar
  • 1½ tbsp Pomegranate molasses
  • 60 ml Olive oil, plus a little extra to finish
  • 1/3 tsp Sea salt
  1. Mix together the tomatoes, peppers and onion in a large bowl and set aside.
  2. In a small bowl whisk the minced garlic, allspice, vinegar, pomegranate molasses, olive oil and salt, until well combined. Pour this over the tomatoes and gently mix.
  3. Arrange the tomatoes and their juices on a large serving plate. Sprinkle over the pomegranate seeds and fresh herbs. Finish with a drizzle of olive oil and serve.

  8. Estupenda ensalada, lo único que por aquí granadas ahora no hay, esperaré hasta final de año para poder comerlas, tendré que sustituirla. Soy una gran aficionada a las ensaladas también.

  12. as you may remember, I am not a tomato fan but if they are chopped very small, I could probably eat some of this beautiful looking salad. It's just so pretty, and i do love capsicums.
