2-ingredient Pork Rind Keto Bread

Pork rinds are one of the most keto friendly snacks you can find and the ideal ingredient to use for keto bread since they contain naturally ZERO carbs. In this dairy-free, gluten-free 2-ingredient bread recipe, you basically just need ground pork rinds and egg whites (I used duck egg whites). Spices and herbs are completely optional. The texture of this keto bread roll is soft, tender and spongy with a crunchy crust. They toast well and hold perfectly firm for patties, pulled beef/chicken/pork or simply spreading butter, (black garlic) mayonnaise and liver parfait. Ground pork rind can be used as a panko substitute too.

 
  • 110 g Salted pork rinds, ground
  • 4 Duck egg whites (or 5 medium chicken egg whites)
  • 1 tbsp Fresh thyme leaves (or herbs of your choice), optional
  • 1 tsp Black garlic granules, optional
  1. Grind the pork rinds in your food processor until you get a crumb-like texture. Beat the egg whites until stiff and glossy.
  2. Add in ground pork rind, fresh thyme leaves and fermented black garlic granules. Gently fold into whipped egg whites until well blended.
  3. Wet your hands with some water and shape the mixture into 3 buns. Place them on a parchment-lined baking tray.
  4. Preheat the oven to 180C/350F. Bake the buns in the middle of hot oven for about 30 minutes until golden brown.

  22. Got small carton of egg white recently and mixed in tuna to make tuna egg white frittata bites. It's so interesting to see pork rinds added into egg whites to make keto bread.
