Ready in 20 minutes, this colourful arugula salad with ruby red grapefruit, edamame (green soya beans), avocadao, Prosciutto and toasted pecans is all you need to be eating a healthy, nourishing salad for dinner tonight. Edamame are soya beans that are harvested and picked when the fuzzy pods are tender and green. They are naturally gluten-free and add a protein boost to your food. If you can't find shelled edamame beans, don't worry— use broad beans instead.
- 150 g Organic frozen shelled edamame
- 750 ml Water
- 1/2 tsp Salt
- 100 g Organic arugula
- 2-3 Ruby red grapefruit, peeled, segmented
- 1 Avocado, peeled and sliced
- 5 Prosciutto slices, torn
- 50 g Pecans, toasted
- 2 tbsp Extra virgin olive oil
- 1 tbsp Apple cider vinegar
- Salt and pepper, to taste

- Fill a medium pot with water and bring to a boil. Add in salt and frozen shelled edamame. Cook 3-5 minutes. Drain the edamame and rinse with cold running water. Drain again and set aside.
- Place olive oil and apple cider vinegar in a small bowl. Season with salt and pepper. Stir to combine.
- Place baby arugula on a serving plate. Arrange grapefruit segments, edamame, avocado and prosciutto on top. Drizzle with dressing and crush the roasted pecans over. Serve immediately.

Sounds like a really refreshing salad dish, although I might have to substitute the grapefruit for something else, as hubby isn't allowed to eat that.
ReplyDeleteI have never heard of edamame beans before, so was hoping you would explain what they were. However before I got that far, I did think they looked very much like broad beans, which is what you confirmed, so that's what I would use.
