Ready in 20 minutes, this colourful arugula salad with ruby red grapefruit, edamame (green soya beans), avocadao, Prosciutto and toasted pecans is all you need to be eating a healthy, nourishing salad for dinner tonight. Edamame are soya beans that are harvested and picked when the fuzzy pods are tender and green. They are naturally gluten-free and add a protein boost to your food. If you can't find shelled edamame beans, don't worry— use broad beans instead.

  • 150 g Organic frozen shelled edamame
  • 750 ml Water
  • 1/2 tsp Salt
  • 100 g Organic arugula
  • 2-3 Ruby red grapefruit, peeled, segmented
  • 1 Avocado, peeled and sliced
  • 5 Prosciutto slices, torn
  • 50 g Pecans, toasted
  • 2 tbsp Extra virgin olive oil
  • 1 tbsp Apple cider vinegar
  • Salt and pepper, to taste
  1. Fill a medium pot with water and bring to a boil. Add in salt and frozen shelled edamame. Cook 3-5 minutes. Drain the edamame and rinse with cold running water. Drain again and set aside.
  2. Place olive oil and apple cider vinegar in a small bowl. Season with salt and pepper. Stir to combine.
  3. Place baby arugula on a serving plate. Arrange grapefruit segments, edamame, avocado and prosciutto on top. Drizzle with dressing and crush the roasted pecans over. Serve immediately.

  4. Angie, I just love this salad! The colours scream spring to me and boy do we need it, it's been cloudy and stormy all week. The grapefruit must really liven up the flavours.

  13. Sounds like a really refreshing salad dish, although I might have to substitute the grapefruit for something else, as hubby isn't allowed to eat that.

I have never heard of edamame beans before, so was hoping you would explain what they were. However before I got that far, I did think they looked very much like broad beans, which is what you confirmed, so that's what I would use.

Another new twist on a salad, thanks for sharing :)

Angie, this salad has all of Dom's favorites. Since he cannot eat grapefruit because of his Lipid medication, I will substitute oranges. Bernadette, New Classic Recipe

This would be perfect for lunch tomorrow, minus the prosciutto and adding prawns instead. This salad is so fresh, colourful and nourishing. A lovely recipe thanks Angie.

  20. Never had me some edamame but would like to try. We only have one producer who sells them frosen but they are very expensive, like 3 or 4 euro for 350g. Not paying that much for a handful of beans LOL

  30. Angie, Great looking salad. Sadly, the only key ingredients I can eat are the pecans and the prosciutto. No grapefruit and no greens...both of which I truly miss! Take Care, Big Daddy Dave
