A delightful option for a light and wholesome meal, these ghee seared scallops are served with a frisée, red onion, and kumquat salad drizzled with a aromatic fruity mango dressing. Scallops are the filet mignon of the sea and you don't want to overcook them. Sear them in a cast iron skillet for 2 minutes, flip and cook one more minute. Make sure to thoroughly dry your scallops before seasoning and searing. They should be springy, not mushy (undercooked) or firm (overcooked) if properly cooked.

- 2 Organic limes
- 1/2 Mango, peeled and chopped
- 3 tbsp Honey
- 3 tbsp Olive oil
- 50-100 ml Coconut water or water
- 1/2 Chilli pepper, seeded and roughly chopped
- Salt and pepper

- 150 g Frisée, torn into bite-sized pieces
- 1 Small red onion, halved and thinly sliced
- 200 g Kumquats, halved
- 16 Scallops, fresh or frozen (thawed overnight in the fridge)
- Salt and pepper
- 3 tbsp Ghee
- 1 clove Garlic, chopped

- Wash 1 lime with hot water, rub dry and finely zest. Cut both limes in half and squeeze out juice. Peel mango, cut flesh from stone.
- Place mango, honey, olive oil, coconut water, chilli pepper, lime juice and zest in a blender and process until smooth. Season the dressing with salt and pepper. Depending on the desired consistency, add a little more coconut water if necessary.
- In a large salad bowl or plate, combine frisée, red onion, and kumquats. Add 2 tablespoons of dressing and gently toss everything together.
- Pat the scallops dry with paper towels and season well with salt and pepper. Heat a large cast iron skillet over high heat and add the ghee, swirling to coat the pan. Add in scallops and sprinkle the chopped garlic aside. Cook the scallops for 2 minutes. Flip the scallops and cook for 1 more minute.
- Remove from the skillet and add to the salad. Drizzle the ghee with garlic over. Serve immediately.
