Purple Sweet Potato Soup

This purple sweet potato soup has the fun and beautiful hue. It’s naturally gluten free, and if you want to go nut free and dairy free, just leave out the topping. Easy and quick to make, full of flavor and perfect for busy weekdays. Like regular sweet potatoes, they have a low glycemic index, making them a good option for a diabetic diet.

 
  • 2 tbsp Olive oil
  • 400 g Purple sweet potatoes washed, peeled and rough chopped
  • 1 Red onion, peeled and roughly chopped
  • 600-800 ml Homemade broth
  • 1/2 tbsp Fresh thyme leaves
  • Salt and pepper
  • Chopped pistachios, to garnish
  • Chilli flakes, to garnish
  • Feta, to garnish
  • Fresh thyme sprigs, to garnish
  1. In a medium saucepan, add olive oil, chopped purple sweet potatoes and red onion. Cook over medium heat for 5 minutes, stirring frequently.
  2. Add in broth and thyme leaves. Cook over medium heat until everything is soft, about 40 minutes.
  3. Use a stick blender to blend the mixture until smooth. Taste and season with salt and pepper.
  4. Divide the soup among serving bowls. Sprinkle with the chopped pistachios, chilli flakes or crumble some Feta over and garnish with a thyme sprig. Serve with crackers or bread.

  9. Las batatas moradas son difíciles de conseguir por aquí, pero con las naranjas normales sí he preparado sopas, me encantan. En este caso además de sabor encontramos color y eso es importante también.

  12. We don't see purple sweet potatoes around very often, here in the UK, but I have to admit that despite them not being the most healthy of vegetables, I do enjoy potatoes of any description.

    I would also probably leave the onion out of this recipe, or at least reduce the amount I added.

    It is also difficult to tell from your lovely pictures, the consistency of the finished soup, as I do prefer very thick and creamy soups.

  14. Just look at that incredibly colour! What a show stopper. I’m serving butternut squash soup on Saturday and now I wish I had seen this first. I’ve only seen purple sweet potatoes at specialty shops here.

  15. It does look purplelicious indeed! We do not have the purple one here, but we do have the regular sweet potato although it is about four times more expensive than the ordinary potato. I do love to roast it in the oven.
    I lost 3kg since the last weeks start of my gluten free life LOL I also feel lighter and do not feel like I could spend all day long in the armchair.

  35. I have not even come to this post before I made the comment on "purple sweet potato soup" on your other post! What a coincidence. Some feta cheese over the soup sounds good as the briny feta cheese will complement the sweetness. I only added milk as a "topping" to my sweet potato soup last time.
