Crunchy, light and delicious, these stuffed snow peas so easy to prepare and are great as an appetizer or anytime snack. If you are making them for a crowd, blanch and split the snow peas ahead of time, chill until ready to fill. The egg salad can be prepared ahead too. Besides egg salad, you can also use herb-flavoured cheese, chicken, tuna or crab meat to fill the pea pods.
- 25 Fresh snow peas
- 3 Large hard boiled eggs, chopped
- 2 tbsp Dill (or parsley) stalk, finely chopped
- 1 tbsp Shallot, finely chopped
- 2 tbsp Homemade mayonnaise
- 1 tsp Dijon mustard
- 1/4 tsp salt
- Freshly milled black pepper
- Fresh dill
- Pink peppercorns
- Pomegranate seeds, optional

- Blanch snow peas by placing in a bowl and pouring boiling water over them. Let stand for about a minute, drain immediately and place in ice cold water.
- In a bowl combine together the chopped eggs, chopped dill stalks, shallot, mayonnaise, Dijon mustard, salt and pepper.
- With a small sharp knife, slit open the straight seam of each snow pea to form a pocket. Spoon a heaping teaspoon of egg salad into each.
- Place them on a bed of fresh herbs or greens. Garnish each pod with dill, pink peppercorns and pomegranate seeds, if using. Eat immediately or refrigerate until serving.
