Romaine Lettuce Salad with Gooseberries and Prawns

This super-easy salad comes together in no time. The pan seared prawns are combined with Romaine lettuce, fresh herbs and gooseberries, and then tossed with a light vinaigrette dressing that can be served as either appetizer or entrée.

SaladDressing
  • 2 head Romaine lettuce, chopped
  • Cilantro or parsley leaves
  • 200 g Gooseberries
  • 200 g Prawns, deveined
  • Sea salt and black pepper
  • 1-2 tbsp Olive oil
  • 2 tbsp Extra-virgin olive oil
  • 1 tbsp Fresh lemon juice
  • 1 tsp Maple syrup or honey
  • 1 Small garlic clove, minced
  • Salt and black pepper
  1. Place Romaine lettuce, cilantro leaves and gooseberries in a serving plater.
  2. In a small bowl, whisk together the olive oil, lemon juice, maple syrup, minced garlic, salt and pepper.
  3. Season the prawns with the salt and pepper. Heat the olive oil in a large nonstick skillet set over medium-high heat. Add the prawns and cook until they are just cooked through, 2-3 minutes.
  4. Spoon the prawns over the salad. Drizzle with the dressing.

  14. Yum! I love some shrimp on a salad and this is a great summer lunch. I like how you cooked them with the skin on...it has great flavor and that salt & pepper really adheres to it.

  21. Just like some things are easy to find here and not there - I don't think I've never seen a gooseberry here. They are beautiful! The salad, shrimp and dressing all sound wonderful and salad meals in the summer are perfect!

  22. Beautiful dish Angie, just love the colours. Have you considered grilling the romaine? It's out of this world, just slightly wilted! I usually rub garlic on it with a little olive oil.

  63. What a wonderful salad, my husband would love this --- and I have to confess, I've never tasted a gooseberry!! I'm not sure I can even get them here in the States...I wonder what is the closest substitute? Grapes?

  65. Hi Angie, after a month absence, I'm back again...can't pass up your beautiful and unusual delicious salad with gooseberries and prawns! The last time I had gooseberries when I visited relatives in Hungary. They have an abundance of these lovely berries growing in their garden.
