Beetroot Chocolate Einkorn Cake

This easy, moist beet and chocolate cake recipe comes from Nigel Slater. The plain cooked vacuum packed beetroot keeps this rich chocolate cake wonderfully moist and extra delicious.

  • 200 g Unsalted butter plus extra for greasing
  • 250 g Vacuum-packed beetroot
  • 200 g 70% Dark chocolate
  • 4 tbsp Hot espresso
  • 130 g Einkorn grain, ground into flour (or spelt flour)
  • 1 tsp Baking powder
  • 3 tbsp Dutch-processed cocoa powder
  • 5 Eggs, separated
  • 0,6 g Pure stevia extract powder (or 190 g golden caster sugar)
  • 80 g Powdered sugar, sifted
  • 2 tbsp Organic beet juice
  1. Preheat the oven to 180C/350F. Grease a 20-cm / 8-in cake tin with a little butter and line the bottom of the tin with a disc of baking parchment.
  2. Blend the beetroot in a food processor to a rough purée.
  3. Melt the chocolate in a bowl suspended over a pan of hot water (do not allow the bottom of the bowl to touch the water), then pour in the hot coffee.
  4. Stir in the butter in small pieces and leave to soften. Remove from the heat and allow to cool slightly.
  5. Meanwhile, sift the flour, baking powder and cocoa together in a bowl and set aside.
  6. Separate the eggs. Whisk the yolks in a bowl until frothy. Stir the eggs into the chocolate and butter mixture, then fold in the beetroot.
  7. Whisk the egg whites until still peaks form when the whisk is removed. Fold in the stevia, then fold into the chocolate mixture, then the flour mixture. Pour the batter into the prepared tin and bake for 40-50 minutes, or until a skewer inserted into the cake comes out clean. Allow to cool in the tin.
  8. Combine the sifted powdered sugar with the beet juice until smooth. Pour the glaze over the cake and allow the icing to set.

  2. This is perfect timing! My friend gave me some Einkorn flour last week, and I have been wondering what I was going to make with it! I love beets, and they give this cake a lovely reddish tint. I won't tell my hubby they're in the cake though, if I want him to eat it. On second thought, maybe I WILL tell him... :)

  69. Angie this looks delicious! I love it when vegetables are hidden in cakes. It makes me feel slightly better eating extra slices ;) Also, they actually make the cake much more moist! I've done beetroot chocolate combination before, and I also really like using carrot in cakes.Love that you use Einkorn flour, much better than modern varieties of processed wheat.

  78. That pink glaze is....oooh la la! I made chocolate and beet cake two years back and i can imagine how moist that cake must be. However einkorn is a new ingredent for me. Also, I like espresso in this cake.

  82. I'm not a big cake eater but I can honestly say that this chocolate beet cake is my favorite!! My SIL made it for my birthday a couple of years ago and it was awesome! You describe it perfectly - super rich, moist and delicious and of course, your pictures prove it!
