Hachiya Persimmon Arugula Salad with Truffle Oil and Lemon Juice

Colourful, fresh and full of flavours, this autumn salad features sweet tender hachiya persimmons, bright peppery green, crunchy juicy pomegranate seeds and rich earthy truffle oil. Persimmons not only lend a seasonal touch to the salad, the sweetness also complements perfectly the spicy arugula and tart pomegranate.

  • 2 Hachiya persimmons, peeled and sliced
  • 50 g Arugula leaves
  • 1 Small red onion, cut into rinds
  • 1 handful Pomegranate seeds
  • Walnuts, optional
  • Truffle oil
  • Lemon juice
  • Sea salt
  • Freshly ground black pepper
  1. Peel the hachiya persimmons and slice them finely on a mandoline. Peel and cut the red onion into rings.
  2. Arrange the arugula leaves and sliced persimmons on a serving plate. Sprinkle with pomegranate seeds and top with onion rings. When ready to serve, drizzle with truffle oil and lemon juice. Season with salt and pepper to taste.

  15. Great recipe! I've never had persimmons in a salad and I love the colors. As the leaves fall and the days gets darker, I think eating colorfully like this really helps our mood. The fact that it's tasty and nutritious food helps, too. : )

  33. I have just missed all the lovely persimmons in Italy. They are still not quite ready there. Probably one or 2 more weeks to go. I will probably buy them in the UK. They are ever so nice and addictive. To me it is like eating jam. A salad with them is a great idea.

  42. I had my first persimmons this year in New Zealand, and I fell in love with them! It was a different variation to this one...I think it started with an F, but man, did I enjoy them! I made a chia seed jam with them and it was so lovely! I can't wait to return home and make a beautiful salad like this, now that I know what I've been missing out on!!

  55. I don't think I've ever tasted a persimmon, though they grow around here! Persimmon pudding is a holiday dish for many of my friends around here...but we didn't experience it growing up. Maybe I should just start with your lovely salad!
