It's a very popular soup in cold winter days here in Germany and traditionally, this German cheese leek soup (Käse-Lauch-Suppe) is prepared with ground meat. I had chosen to leave it out as I had a huge porterhouse as the main. However, you can top the soup with some crispy bacon bites and croutons for the crunchiness or simply serve it with some warm bread or rye crackers.
Cheese spread or processed cheese (Schmelzkäse in German) is made from ripe semi-hard cheese or fresh cheese (at least 50 %) with the addition of other milk products, such as butter or cream. It thickens sauces and soups and gives the dishes a fine, savoury note. Processed cheese is also perfect for gratin. It usually has a longer shelf life.

This silky smooth, super versatile vegetarian soup is perfect for the fall and winter months. It's naturally gluten-free and quick and easy to make. The crunchy garam masala peanut topping makes it over-the-top delicious! It can also be frozen for future lunches and dinners. If you need it dairy-free, just use thick coconut cream (without the coconut water) and a teaspoon of lemon juice instead of crème fraîche.

Peanut CrunchSoup
  • 2 tbsp Honey or maple syrup
  • 1 tbsp Sesame oil
  • 2 tsp Garam masala
  • 1 tsp Tomato paste
  • 100 g Unsalted roasted peanuts
  • Sea salt
  • Rosemary, chopped
  • 2 tbsp Olive oil
  • 1 Onion, finely chopped
  • 150 g Carrots, peeled and chopped
  • 3 cm Fresh ginger root, finely chopped
  • 2 Garlic cloves, crushed
  • 1/2 tsp Dried red chilli flakes
  • 500 g Sweet potatoes, peeled and cubed
  • Salt and black pepper
  • 800 ml Vegetable stock
  • 100 ml Crème fraîche
  1. Preheat the oven to 180C/350F. To prepare the peanut crunch, mix honey, oil, garam masala, tomato paste and peanuts together. Spread on a baking tray lined with parchment paper. Season. Bake in the mddle of hot oven for 12 minutes. Remove and sprinkle the chopped rosemary over. Set aside to cool.
  2. Heat the olive oil in a large saucepan over a medium-high heat. Add the onion and carrots and cook until softened. Stir in the ginger, garlic and chilli flakes and fry for 2–3 minutes, or until fragrant.
  3. Stir in the cubed sweet potatoes and stock. Turn up the heat and bring the pan to the boil. Reduce the heat to low and simmer with the lid on for 20 minutes, or until the sweet potato is tender.
  4. Use a stick blender to process until smooth. Alternatively, tip it into a food processor and blend. Stir in crème fraîche. Taste and season.
  5. Serve in bowls topped with peanut crisp and a good grinding of black pepper.

Tangy, earthy goat cheese, fresh dill and toasty macadamia nuts come together in beautiful harmony. Creamy, cheesy and full of flavour, this soup is a lovely combination of tangy, earthy fresh goat cheese, homemade broth and cream. Goat cheese and dill are such a classic culinary combination and compliment each other so well while rich toasty macadamia nuts add extra flavour and crunch to the soup. It makes an elegant appetizer or a light meal when paired with a couple of slices of keto garlic bread.

  • 2 Shallots, minced
  • 1 clove Garlic, minced
  • 2 tbsp Butter
  • 500 ml Vegetable or chicken broth
  • 150 g / 1 roll Soft goat cheese, crumbled
  • 100 g Cream
  • Sea salt
  • Freshly milled black pepper
  • 2 tsp Freshly squeezed lemon juice
  • Dill, for the topping
  • Macadamia nuts, toasted and roughly chopped, for the topping
  1. Peel and finely chop the shallots and garlic clove. In a large saucepan, saute chopped shallots and garlic in butter until tender. Pour in broth and bring it to a boil. Add in crumbled goat cheese and cream. Cook over mild heat until cheese is melted.
  2. Use an immersion stick and process the soup until smooth. Season with salt, pepper and lemon juice.
  3. Divide the soup into two bowls. Top with chopped dill and chopped toasted macadamias.
