Easy Red Lentil Curry with Pasta

What a simple yet flavourful treat: this lentil curry with pasta provides you with new energy and fills you up without making you feel unwell. The nutty creamy red lentils combined with sweet tangy tomato and aromatic curry are simply brilliant. The secret is that you first roast the lentils with spices so that the smoky flavour can develop. You can serve the curry with pasta or rice.

 

Easy Red Lentil Curry with Pasta

  • 3 Garlic cloves, peeled and finely chopped
  • 1 Large onion, peeled and finely chopped
  • 1 tbsp Butter
  • 150 g Red lentils
  • 1 tbsp Curry powder (I used Madras)
  • 1 tsp Garam masala
  • 150 g Tomato puree
  • 500 ml Vegetable or chicken stock
  • 150 ml Cream
  • Sea salt and pepper
  • 160 Pasta (I used Fusilli)
  • Sea salt
  • Cilantro or parsley, chopped
  1. Peel and finely chop the garlic and onion. Heat the butter in a pan and sauté the onion and garlic. Add the lentils and sprinkle with curry powder and garam masala. Stir in the tomato paste and deglaze with the stock.
  2. Simmer the lentils over a medium heat for 10-12 minutes. Str in cream and simmer over a medium heat, covered, for a further 5-10 minutes. As soon as the lentils are cooked, season with salt and pepper. If the curry is too thick, add a little stock, tomato purée and cream to taste.
  3. Meanwhile cook the pasta in a pot of boiling salted water for about 8 minutes.
  4. Drain the pasta and arrange on a plate with the lentil curry. Sprinkle with chopped cilantro or parsley as desired.

Hi Angie, I've never seen, much less eaten, lentils prepared like this. Mostly lentils in soup... This dish looks great and healthy too. As for stuffing for Thanksgiving being made outside the turkey, (when is stuffing not stuffing), many, if not most here in the USA are now preparing the stuffing outside the bird. Mostly a safety issue as far as I can tell...ensuring that the bird is properly roasted without possible interference from the stuffing. I much prefer stuffing inside the bird!
