Green Bean Salad with Dried Fig, Feta and Physalis

This simple, yet delicious salad combines crunchy green beans, dried fig, feta and physalis with toasted sunflower seeds and a simple shallot vinaigrette for maximum flavour. Toasted sunflower seeds give a nutty crunch to this tasty side dish, but you can use pine nuts, almonds or even walnuts. It will complement any fish or meat, but you can also enjoy it as a light lunch.

 
Shallot Vinaigrette
  • 300 g Green beans, trimmed
  • 2 tbsp Sunflower seeds, toasted
  • 4-6 Dried figs, thinly sliced
  • Mint leaves
  • 120 g Feta, broke into cubes
  • 100 g Physalis
  • 1 Shallot, minced
  • 2 tbsp Red wine vinegar
  • 1-2 tsp Dijon wholegrain mustard
  • 1 tsp Maple syrup or honey
  • 60 ml Extra-virgin olive oil
  • 1/4 tsp Sea salt
  • 1/2 tsp Coarsely ground black pepper
  1. For the dressing, whisk together shallot, vinegar, mustard, and maple syrup or honey in a bowl or a glass jar. Slowly whisk in olive oil until well combined. Season with salt and pepper.
  2. Heat a medium skillet over medium heat. Add the sunflower seeds to the pan and roast for 3 -5 minutes, stirring occasionally stirring occasionally until they become fragrant and golden brown.
  3. Blanch the green beans in a large pan of boiling salted water for 3 minutes or until tender. Drain and place in a bowl of iced water until cool, then drain again and pat dry with paper towel.
  4. To serve, place beans on a platter, top with sliced fig, mint leaves, feta and physalis. Drizzle with dressing and scatter over sunflower seeds.

I've always thought that my salads are some of the most unique (yes, I'm super humble lol). But I don't think that's the case - you keep surprising me with some of the most complex and original ideas! Needless to say, your presentation is always spot on.

Every once in a while, Trader Joe's will have physalis. I will keep an eye out for them to make this, but I imagine I can make another fruit substitution in the meantime.
