Purple Sweet Potato Bites with Creamy Horseradish Sauce and Caviar

Striking colours and bold flavours packed into these small, delicious bites – the perfect starter for your holiday dinner party.
Purple sweet potatoes are fun to cook with and can be used in many of the same ways as the regular sweet potatoes. They add a fantastic pop of colour to food and are high in Vitamin C, potassium, fiber, flavanoids and anthocyanins, which are powerful antioxidants and have been linked to reducing dementia and maintaining brain health. The violet hue comes from anthocyanins, the same pigment that gives red wine, berries, purple carrots & cabbage, and other vegetables their colour.
Purple sweet potatoes have a rich, creamy texture. They are denser and more floury than regular sweet potatoes, which is why you need to cook them longer than you would a regular sweet potato (from 1 1/2 to 2 hours at 180C/350F). They are so easy to prepare, but not so easy to find and will cost a little more.

 
  • 350 g Purple sweet potatoes, scrubbed
  • 1 tbsp Olive oil
  • Celtic grey salt
  • Black pepper
  • 1 tsp Fresh thyme leaves, chopped
  • 150 g Crème fraîche (or full fat sour cream)
  • 1 tbsp Prepared horseradish in jar
  • 2 tbsp Fresh dill, chopped plus extra for garnishing
  • Black caviar
  • 1 tsp Pink peppercorns for garnishing
  1. Preheat the oven to 200C/400F. Wash and scrub the purple sweet potatoes. Cut the sweet potatoes into .5cm / 1/4inch thick slices. Place them in a large baking tray and drizzle the olive oil over. Season with grey salt and black pepper. Sprinkle the chopped thyme leaves over. Roast for 15 minutes or until tender. Remove and set aside.
  2. Meanwhile, mix crème fraîche, horseradish and chopped dill in a bowl. Season with salt and black pepper.
  3. Top each sweet potato slice with a dollop of prepared cream, and add about 1/3-1/2 teaspoon of caviar on top.
  4. Garnish with extra chopped dill and pink peppercorns. Serve immediately.

Looks and sounds delish, but let me call my friend Celtic queen Boudicca to send me some Celtic gray salt LOOOL Haven't eaten horseradish in a while, but people here usually eat it for Easter with cooked ham and eggs. I sometimes put it on fresh spring radishes.

My favorite purple sweet potato (besides Japanese sweet potato). I usually baked them whole as-is and enjoy as-is. Also tried making a pureed-soup from it before.
