These tender green bean bundles with Jamón Ibérico ham are quite easy to put together and the flavours blend well. The nutty, lightly tangy, rich brown butter vinaigrette is perfect with simply blanched green beans. Make sure to make an extra batch as it's also great to toss with some roasted pumpkin, potatoes or Brussels sprouts.
Jamón Ibérico, the king of the ham, is a variety of jamón or presunto, a type of cured leg of pork made from black Iberian pigs in Spain. Use Italian Prosciutto instead if desired.
Haricots Verts (thin French green beans) are slightly longer and skinnier than regular green beans and may be a little bit more expensive. They are harvested earlier then regular green beans, so they are thought to be more tender and more flavourful. Regular green beans would work just as great.

Hazelnut Brown Butter Dressing
  • 500 g Haricots verts, trimmed
  • 8 slice Jamón Ibérico (or Prosciutto)
  • Fresh thyme
  • Pink peppercorns, optional
  • 60 g Unsalted butter
  • 2 tbsp Extra virgin olive oil
  • 40 g Hazelnuts, roughly chopped (or walnuts)
  • 2 tbsp Balsamic vinegar (Sherry or red white vinegar)
  • 2 tsp Wholegrain mustard
  • Sea salt and cracked black pepper
  1. Cook the green beans in a large saucepan of boiling water for 1–2 minutes or until bright green and tender crisp. Drain, refresh under cold running water. Drain and divide into 8 even bundles.
  2. Use a slice of Iberian ham or prosciutto to wrap around the centre of a bundle of beans and scrunch at the top to secure. Repeat with remaining ham slices and bean bundles.
  3. To make the almond brown butter dressing, melt the butter in a frying pan over high heat until dark brown. Add the olive oil and hazelnuts. Cook for 2 minutes or until nuts are toasted. Remove from heat and stir in vinegar, mustard, salt and pepper.
  4. Place the bean bundles on a large serving platter. Drizzle the warm dressing over the bundles, scatter with the thyme and pink peppercorns and serve.

Nuts, balsamic, mustard and thyme - what an interesting combo pf flavouring agents for probably the best-looking green beans I can remember seeing . . . even if you are not the biggest vegetable eater in the big wide world - you certainly would reach for these - thanks . . .
