Snow Pea Pistachio Pesto

Ditch the store-bought one and make your own fresh-as-can-be pesto! I've swapped basil for snow peas and flat parsley to make this vibrant and versatile Italian sauce – toss through pasta, stir through roasted potatos and vegetables, use as a pizza sauce, spread on bread and more. Once made, fresh pesto is best used straight away, but will keep for a few days in a sealed container in the fridge.

 
  • 250 g Snow peas, trimmed
  • 30 g Flat parsley, chopped
  • 40 g Unsalted roasted pistachios
  • 50 g Parmigiano-Reggiano, grated
  • 1 Garlic clove, peeled
  • 1 Organic lemon, zested and juiced
  • 1/2 tsp Sea salt
  • 1/3 tsp Black pepper
  • 150 ml Olive oil
  1. Break off the stem end of each pea and pull the string away from the pod. Rinse well. Place them in a large bowl and pour some boiling water over. Leave it for 20 seconds and remove and refresh them in a bowl of ice water. Cut them up in halves.
  2. Place the snow peas, parsley, pistachios, Parmesan, garlic clove, lemon juice and zest, salt and pepper in a food processor. Pulse until broken down. Gradually add the olive oil in a thin, steady stream until you have a smooth-ish sauce with a little texture remaining. Taste and season with more salt and pepper if needed.

I love pesto, however my husband isn't quite so keen, so I rarely add it to anything. Your idea of tossing it through pasta had me thinking about one of his favourite dishes which I make regularly with pasta, chicken, chillies and wild mushrooms, tossed in a little extra virgin olive oil. The addition of a little pesto would only add even more flavour surely? and he wouldn't notice much difference in appearance. Thanks for the idea! :)
