A delicious and light chicken salad that ain't drowning in mayo and perfect for leftover roasted chicken. The fun part of this salad is the spicy sesame dressing, which would be good for soba noodle salad too. It is simple, tangy and so delicious! The salad is packed with flavour and high in protein that keeps you satisfied and keep the calories low.

  • 2 tsp Rice vinegar
  • 1 tbsp Roasted sesame oil
  • 1 tsp Minced ginger
  • 1 tsp Light soya sauce
  • 1/2 tsp Dried chilli flakes
  1. Shred chicken. Place in a large bowl. Add cucumber, celery, carrot, coriander / flat parsley, and chilli pepper.

How are Lebanese cucumbers different from the regular ones? I've never heard of them before. I eat only the sweet salad ones, the domestic ones with little thorns on them I avoid.

Perfect timing. I have some leftover roast chicken and have been trying to figure out what to do with that's not too heavy. This salad is perfect. Thanks Angie!

@DEZMOND Lebanese cucumber has less seeds and smooth skin. I actually like those with bumpy and ridged skin.

I love sesame oil in my cooking, both in hot and cold food, so will often add it to my salad, especially as hubbie is not a fan of mayonnaise at all!

I'm afraid that I too, would have to take a fork to this dish though, as I have yet to master the correct use of chopsticks!

My kind of quick and easy meal, thanks for sharing! :)

We're eating more main course salads for dinner lately (weather turning warmer and just wanting to eat lighter and all of that). So your timing is perfect. Such a lovely dish -- thanks.

I enjoy these kind of flavours, and it is a bit warmer here today so this could be perfect for lunch.I would use a fresh large chilli because I can grow them.
Great. Thanks
