Turmeric Cauliflower Steaks

These oven-roasted turmeric seasoned cauliflower steaks are easy to prepare and would make an excellent vegetarian side or light dinner.

  • 2 Medium cauliflowers (about 2 kg)
  • 60 ml Extra virgin olive oil
  • 2 tsp Ground turmeric
  • Sea salt
  • Freshly milled black pepper
  • Fresh herbs, chopped, to serve
  • Thinly sliced red chilli, to serve
  1. Preheat oven to 180C/350F. Line a large baking tray with parchment paper.
  2. Cut the cauliflower into four 1.5cm-thick slices, leaving base intact.
  3. Whisk the olive oil with the turmeric in a bowl until combined. Brush over cauliflower steaks and place them in the prepared baking tray. Grind some black pepper and sea salt over.
  4. Roast cauliflower in the oven for 25-30 minutes or until tender and crisp. Scatter with chopped herbs and thinly sliced red chilli, to serve.

I’ve always wanted to make cauliflower steaks, and I never use turmeric in my cooking so I have to try this recipe. You make veggies so exciting Angie, thank you for that ;)

This blows away the overrated roasted cauliflower pieces any time. I love cauliflower in any shape and form, but these colorful steaks is the ultimate creation that I have not seen so far! Great job, Angie...a must try!

I am loving turmeric, it has such a wonderful, earthy flavour against the sweet roasted cauliflower. I have been using fresh because it seems to be more potent and I love it's anti-inflamatory properties. I will have to try these gorgeous steaks, I bet they'd be amazing on the BBQ too!

Perfectly roasted! Look at the golden hue, and lightly-charred brown surface/edges. Been a while since I roasted cauliflower steaks. They are so delicious.

It is snowing lightly as I type this comment, winter isn't over yet which makes this dish the perfect meal. I love that it takes three days, that way you're not stuck in the kitchen bending over a pot for hours at end. Plus, I love that it allows you to skim of the excess fat. I have a lamb shank recipe that I make a day in advance because lamb shanks also tend to be quite fatty and although some people love the richness, I can't do it. Your dish looks rich and delicious.
