Kale Muffins with Kamut and Spelt

Soft, moist and comforting – these sugar-free, wholegrain muffins are wonderfully delicious with a healthful boost from kale and yogurt. They are perfect for breakfast or as a snack.
Kamut, or Khorasan wheat, is an ancient wheat variety, naturally high in protein, minerals and known for its rich nutty flavor. Feel free to substitute it with standard wholewheat or spelt flour.

Kamut Kale Muffins

adapted from Eat Smarter
  • 150 g Fresh kale
  • Sea salt
  • 100 g Wholegrain kamut, ground into flour
  • 125 g Refined spelt flour
  • 2 tsp Baking powder
  • 2 Eggs
  • 220 g 0,1% Plain yogurt
  • 80 ml Sunflower oil
  • 1 tbsp Black sesame seeds, optional
  1. Bring a pot of salted water to a boil. Add the kale leaves and cook for 3 minutes. Remove and quickly rinse under cold water. Drain and finely chop the kale.
  2. Preheat the oven to 180C/350F. Line a muffin pan with paper or silicon liners or simply butter the pan. Set aside.
  3. In a mixing bowl, whisk together the ground kamut, refined spelt flour and baking powder. Stir the eggs, yogurt, pinch of salt, and oil in another bowl until well combined.
  4. Add the flour mixture and chopped kale to the egg mixture. Stir until well combined. Divide the batter into 10-12 muffin liners. Sprinkle the top with a little black sesame seeds.
  5. Bake in the middle of hot oven for about 25 minutes until nicely golden. Leave the muffins in the pan to cool for a couple of minutes before transferring them to a wire rack to cool.

Magnificent muffins…perfectly golden with green (amazingly vibrant this green!) "glitter". Question Angie…for your readers based here in Europe…Is it possible to find KALE in the French or Swiss markets…at all?!..I am having one heck of a time trying to locate it that does not involve special trips to Paris…Could chou frisée..or even spinach…be acceptable substitutes? I have heard a rumor that it is starting to be cultivated (kale) outside of Lyon…I cannot wait to be able to find this locally!…Thanks for any advice for a suitable substitute in the meantime..and thank you for this sublime recipe!

Oops..forgot to ask if nigella seeds (black) could be subbed in for the black sesame seeds…I have golden sesame…but the black is truly lovely here.

@Donna Thank you so much, Donna. Can't believe that kale ain't available there...I meant, this is one very common winter veggie.
If you can't find the fresh one, frozen one (thawed before using) or Swiss chard will work just great.
Sesame seeds are optional, just for the garnish, nigella seeds sound like a good alternative to me, otherwise, just use poppy seeds or golden sesame.

I love Kamut on its own but combing this with kale and yogurt into a muffin sounds phenomenal. Plus these muffins are beautiful. I've never viewed the source you got this from but will check it out. Great recipe. I will definitely make these healthy muffins.

Kale in a muffin!? That is pretty ballsy....I bet it paid off though! These look totally unique and probably have such great flavour.
At work yesterday, we worked on developing a new flavour of 'powerball' and we wanted a green one. So we did kale and hemp and chia and chlorophyll allllll mixed up with shredded coconut and dates. It actually worked really well! Very green and refreshing and not too sweet.

I just made them and they are perfect and delicious! I am not a very big fan of sweet muffins, so this kale muffins are a healthy and addicted snack :). First a thought kale in a muffin? That's weird... But then I made them and I like the muffins a lot. Thanks for sharing the recipe Angie!
