Broad Bean Salad with Feta and Almonds

Broad beans, also known as fava beans, are sweet, tender and delicious pod beans with a smooth creamy texture. This is a lovely summer salad which can be eaten on its own or as an accompaniment to any meaty main dishes.

Broad Bean Salad with Feta and Almonds

adapted from BBC Good Food
  • 100 g Broad beans, podded weight
  • 1 handful Cilantro or parsley, roughly chopped
  • 1 Shallot, finely chopped
  • 50 g Feta cheese, cubed
  • 1 tbsp Lemon-scented olive oil
  • 50 g Almonds, skin on
  • 1 tbsp Lemon juice
  1. Briefly cook the broad beans in simmering water, drain and refresh in cold water. Squeeze them out of their grey outer pods, if you want.
  2. Put the cilantro in a bowl, add the shallot and feta. Heat the olive oil in a small frying pan and toast the almonds, add a little salt to the pan, toss, then add the cilantro mix along with the beans. Dress with the lemon juice.

This is interesting because I've always thought that fava beans took forever to cook. You say to cook briefly. Obviously my thinking was wrong. It's one of the reasons why I've stayed away from them, but now that I've seen you delicious looking salad and that you say to cook briefly, maybe I should get over it and give them a try. I love lima beans and just about any type of beans, so your salad looks quite appealing. Gorgeous pics Angie!

When we were in Italy last month, we all went with my in-laws to their farm to pick fava. Oh my goodness...there were so many! This would've been a perfect salad to make with them and I now miss them after seeing your salad:)

I do enjoy fava beans but it has been a while since I have them. I recall cooking the fava beans was not easy, maybe just time-consuming. How long did you take to simmer the beans? I think I tried removing the grey outer pods the last time - that is why they took quite some time to prepare.

@tigerfish The broad beans I bought were fresh and they don't need more than 5 mins to cook...I actually even ate them RAW! After poaching in salted water for 2-3 mins, I transferred them in cold water and removed the grey shells....it's not necessary, but they look better.
