Labels: { , , , }

http://schneiderchen.de | © 2013 | http://angiesrecipes.blogspot.com

This simple and colourful quinoa salad is ridiculously good for you, tasty, versatile and so simple to prepare with cherry tomatoes, fruits and herring roe. It's perfect for potluck or anytime really!
Herring roe is in truth the milets, which is from male fish, in other words, it's herring sperm. Leave it out if you are a vegetarian.

  • 180 g Quinoa
  • 480 ml Water
  • 2 tbsp Herring roe
  • 250 g Fresh fruit, diced
  • 50 g Cherry tomatoes, halved
  • 2 stalk Green onions, chopped
  • 50 ml Extra-virgin olive oil
  • 2 Limes, juiced
  • 2 tsp Cumin powder
  • 1 tsp Salt
  • 1 tsp Chilli flakes
  1. Bring quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, about 15 minutes. Set aside to cool.
  2. Whisk olive oil, lime juice, cumin, salt, and chilli flakes together in a bowl.
  3. Combine quinoa, tomatoes, diced fruits, and green onions together in a salad bowl. Pour dressing over quinoa mixture. Toss to coat and season with salt and black pepper. Serve immediately.

Herring roe sounds... interesting! I don't think we'd find it here, so I will substitute haloumi when I make this delicious salad.

I would go for quinoa salad anytime. I might leave roe out though. I am not vegetarian but I guess it is more of a texture thing. But you are right, with simple herbs and tomatoes, this is a nice, filling salad! Thanks :)

Hi Angie,
A lovely beautiful salad! I have never had caviar before, always wondering how they actually taste like!

[Reply]
glutwin 29/4/13 12:58

Oh this is a beautiful display of culinary art at its very best...such pops of color and texture here...not to mention nutritive value!!...Two questions for you Angie...1) Which "fruits" do you recommend here in this salad to compliment the herring roe? and 2) I presently have no herring roe.,..but a small jar of black "oeufs de lompe" in the fridge here on the Swiss/French border...Should I wait until I can find the "real deal"?...Is it very difficult to find or dauntingly expensive?

@glutwinI have used a mix of pear and mango. They went really well with crunchy, mildly salted caviar. The herring roe ain't expensive and I am sure that your black lumpfish caviar would work just great.
