  • 2 Apples, diced
  • 1-2 Tomatoes, diced
  • 1 Small purple onion, finely chopped
  • 1/2 Yellow onion, finely chopped
  • 1/4 Red bell pepper, finely chopped
  • 1 handful Rocket leaves, chopped
  • 1 clove Garlic, minced
  • 2 tbsp Fresh lime juice
  • 1 tsp Honey
  • 1/2 tsp Chilli flakes
  1. Combine all ingredients in a bowl. Cover and refrigerate for at least an hour to allow the flavours to blend together.

I make salsas all the time but I've never made one with pineapple. I love pineapple and have fresh cut up all the time in our home. Why I never thought to put it in a salsa is beyond me.

Your recipe sounds great. Pineapple, apples and tomatoes sound like an interesting combination that I look forward to trying.
