Zucchini Ribbon Caper Salad

The lemon juice and olive oil dressing makes this zucchini salad tastes fresh, while capers definitely add flavour and interest to this summer squash salad. Super simple and absolutely delicious!

  • 2 Small zucchini, peeled into strips
  • 2 tbsp Olive oil
  • 1/2 Lemon, zested
  • 1 Garlic, crushed
  • Salt and pepper
  • 1 Tomato, deseeded and julienne
  • 1 tbsp Capers
    ©angiesrecipes
    , drained and rinse
  1. Toss the zucchini strips with the oil, lemon zest and juice, garlic, salt and pepper. Set aside for 30 minutes to marinate.
  2. Divide between 2-3 plates and top with capers, tomato julienne. Drizzle any extra dressing over if desired. To garnish, sprinkle a pinch of dried parsley over.

Growing up, I always put capers on my bagels and lox. Unfortunately, my husband isn't a big fan of them, so I rarely get to use them in dishes.

With that being said, I think that I might have to make an exception for this beautiful salad. It looks so refreshing.

Very pretty salad! I love the simple, fresh and zesty flavours. Ive got a batch of frozen yeast dough and everything I need for this salad and I'm thinking....zucchini salad for lunch and maybe, zucchini ribbon salad on pizza dough for dinner LOL With lots and lots of cheese on top, of course!!

All the ingredients in this seems like they would be delicious together. I'd even be willing to try raw zucchini for it. Though I'm a mite trepidacious. I've never eaten zucchini raw before. We'll give it a go and see.
